- 1 egg yolk
- 1 tbsp. Dijon Mustard
- 1/2 cup of vegetable oil
- 1 tsp. Black Truffle Oil
- Salt & pepper
- In a bowl, place the egg yolk and the Dijon Mustard.
- Add the vegetable oil very slowly, one trickle at a time, while whisking constantly. If you add too much oil, your mayo won't set, it will collapse.
- Once the mayo is nice and creamy, add the Black Truffle Oil and season to taste.
