Freshness Window
Burgundy truffles are hardier than white truffles, but a little care keeps their aroma at its best.
On Arrival
A little condensation inside the wrapping is normal. It's moisture the truffle releases in transit, and the paper wrap is there to absorb it and keep the truffle from drying out.
In the Fridge
Wrap each truffle in absorbent paper and keep it in a dry, sealed container in the crisper drawer. Change the paper daily, and never store truffles in rice.
Before Using
The Burgundy's textured, diamond-patterned skin can hold traces of soil. Use a soft brush under a thin stream of water to clean its crevices, then pat dry. Clean only what you're about to use.
A Bonus
Truffles perfume everything around them. Store a few eggs or a block of butter in the container overnight for truffle eggs and truffle butter.
