The White Truffle Kit is the perfect way to pamper that special truffle lover - with 1 or 2 oz of fresh white Alba truffles, one olive wood truffle slicer and a wooden brush with a good grip to clean white truffles. In season, we receive several shipments of fresh truffles directly from our growers every week. Our truffles are always fresh! 

White truffles are prized for their distinct aroma and intense, garlicky flavor. They are always served fresh: sliced or shaved on top of your dishes. The heat of your cooked dish is just enough to release the aroma of the truffles, enhancing their natural pungency. 

Tuber Magnatum Pico, also known as the white Alba truffle, is native to northern Italy and has never been cultivated in truffle fields. It grows in the wild. The rarity and exceptional flavor of this truffle explains its high value. It is distinguished from other truffle species by its smooth envelope and its light ochre color with pinkish shades. Its flesh with thin white marbling varies from white to dark pink to brown, depending on the tree with which it grows in symbiosis. Its alliaceous perfume is particularly powerful and bewitching. This truffle is in season from September to December in Italy. November is the biggest “harvest” month. White Alba truffle is the undisputed queen!

Fresh White truffles: 

Origin: Italy.   

Season: September to December.   

Shape: More or less round.   

Peridium (skin): Smooth, pale cream, yellowish with occasional bright red spots and a brown cracked area.   

Gleba (flesh): At first gray/white, then beige/light brown with a touch of ochre, white marbling.   

Perfume: Intense, earth, garlic, shallots and grana cheese.   

Size: 1 oz fresh truffle serves 2-3 people. As truffles vary in size and shape, your orders may include 1 or 2 truffles of varying weight. 

Wood Handle Truffle Slicer: 

Olive wood truffle slicer. Plain blade.

Thickness ranging from 0.2 mm to 3 mm.

Truffle Brush: 

FSC® beech wood plain – bristles in 100% pure Tampico fibers.


Truffles are wrapped individually in unbleached paper towel and placed in a labeled brown paper bag. This allows the truffle to breathe and prevents condensation. 

Once you receive your shipment, gently wrap the truffle in an absorbent paper and store in a dry and sealed container in the crisper compartment of the refrigerator (bottom drawer). The paper should be changed daily, and the container must be kept dry. Remove the truffle from the fridge, clean/brush it properly under a thin stream of water and enjoy it right away! Do not store truffles in rice. This will dry them out! 

Truffles have a strong aroma, which will quickly be absorbed by any other food in the refrigerator, so it is important to store them in their own container. Alternatively, you can add eggs or butter in the container, which will result in truffle eggs and truffle butter!

For the best aroma and flavor experience, do not wait to enjoy your truffles. When properly stored in the fridge, fresh white truffles have a shelf-life of 3-5 days. 

Items are prepared fresh and shipped directly from our truffle shop in Manhattan. We carefully pack fresh truffles with re-usable ice packs in insulated Styrofoam coolers marked perishable. 

We ship perishable items via FedEx Overnight Monday-Thursday and non-perishable items via FedEx Ground Monday-Friday. Saturday delivery is an option that can be selected at check out.
